1/2 c plain yogurt
1 T cilantro, freshly chopped
2 t mint, freshly chopped
salt and pepper to taste
4 7-ounce salmon steaks, 1" thick
2 t vegetable oil
Combine the yogurt and spices in a small bowl. This is the mint sauce.
Lightly spray grill (indoor or outdoor) with oil.
Preheat the grill.
Brush the fish with the oil and season with pepper to taste.
Place salmon onto grill.
Cook until golden, about 5-6 minutes. Flip salmon steak over and cook until done – about 4 minutes. It will be opaque in color, but still juicy.
Remove steaks from grill and place onto serving plate.
Drizzle mint sauce over steak prior to serving.

Italian Seafood Skewers
¼ c canola oil
¼ c lemon juice, freshly
squeezed or bottled
1 garlic clove, minced
1 t oregano, dried or 1 T freshly
chopped
1 t chicken bouillon granules
1 T basil, freshly chopped
salt and pepper to taste
¾ pound uncooked fresh shrimp,
peeled and deveined
½ pound sea scallops
1 large each red and green pepper, cut
into chunks
1 small zucchini, cut into 1/4"
slices
1 small yellow squash, cut into 1/4"
slices
In a bowl, combine the first seven
ingredients. This will be your marinade. Divide marinade into two large
resealable plastic bags. Add shrimp and scallops to one bag. Add veggies to other bag. Place bags into fridge for about 3-4
hours. After marinading, drain seafood and
discard marinade. Drain veggies and keep marinade from veggies for
basting. Alternate the shrimp, scallops, peppers
and squash while putting onto skewers – does not matter whether
they are wooden or metal. Place skewers onto preheated grill
(indoor or outdoor). Grill, uncovered, over medium heat for
about 6 minutes.
When done, shrimp will be pink. Baste occasionally and turn once. Serve over a bed of cooked rice, if
desired.
Spicy Curried Fish and Veggies
(serves 4)
2 T veggie broth
1 large fish fillet, cooked and flaked
1 small onion, chopped
2 garlic cloves, minced
1 T ginger, freshly minced
¼ t hot pepper flakes
2 t curry powder
½ t ground cumin
1-1/2 c veggie broth, low sodium
variety
1 small cauliflower, cut into florets
2 small red potatoes, cubed
1/3 pound fresh green beans, halved
½ c crushed tomatoes, canned or
fresh
½ cup plain yogurt
Heat 2T veggie broth in large skillet
over medium heat.
Stir in flaked fish, onion, garlic,
ginger, and pepper flakes.
Cook until onions are clear (about 2-3
minutes), stirring occasionally.
Add curry powder and cumin. Stir.
Add one cup veggie broth and veggies.
Cover and cook over medium heat until
veggies are tender.
Add more broth, if needed.
Cook for 20 minutes.
Remove from heat and stir in yogurt.
If you want to prepare an entire
seafood meal, simply serve the Spicy Curried Fish and Veggies over a
cooked bed of brown rice. You can make it prettier by placing a few
sprigs of fresh parsley bordering the dish. (As a side note, parsley is great for the digestive system.) For dessert, have some
Mango Mousse and you are set. The wine of choice, if you are so
interested, could be a Merlot.
This is a heart healthy recipe that is
low in carbohydrates, calories, and fat. And, it is high in protein.
