Seafood pasta recipe

For a wonderful seafood pasta recipe that is an escape from the ordinary, try this broccoli seafood alfredo recipe from the Red Lobster website (www.RedLobster.com) It serves 4 and by using low fat milk and cheese as a supplement for the whole fat products, you'll find a lighter meal with all of the great taste and rich creaminess that you would expect from alfredo.

1 16 ounce package fettuccine, cooked
1 pound fresh medium sized shrimp, peeled and deveined
½ cup fresh flounder fillets, cut into chunks
3 garlic cloves, minced
½ cup butter or margarine
1 1” thick slice of onion, chopped
1 8 ounce package, low fat cream cheese, cubed
1 cup low fat milk
½ cup Parmesan cheese, grated
3 cups steamed broccoli
1 1” thick slice of onion, chopped
salt and pepper to taste

Prepare fettuccine according to package directions. Drain and place back into saucepan. Cover and set aside. While the pasta is being prepared: In a large skillet, saute the shrimp, flounder, onion, and garlic in the butter or margarine. Cook until the shrimp turns pink. This will be your seafood mixture. Remove seafood mixture and place into a bowl, cover to keep warm. In warmed, same skillet combine cream cheese, milk, Parmesan cheese. Cook until cheeses are melted and smooth. Stir broccoli and seafood mixture into cheese mixture. Heat thoroughly. Place drained fettuccine onto serving plate. Top with seafood/cheese mixture. Mix thoroughly, if desired. This seafood pasta recipe is great when combined with a fresh greens salad topped with a balsamic vinaigrette.
