This fish recipe is a low-fat, healthy living kind of recipe you will just love. Each serving has only 184 calories. Plus, it is easy and quick to make. Try it, you may just find yourself loving it!
Flounder Dijon (serves 4)
4 fresh flounder fillets
4 large carrots, peeled and julienned
2 T parsley, chopped
1 t olive oil
salt and pepper to taste
2 t Dijon mustard
1 t honey
Preheat oven to 350. In an 9" x 12" baking pan, combine carrots, parsley, oil, salt and pepper. Place fish fillets on top of carrot mixture. Place into oven and bake for about 15 minutes.
In a small bowl, combine mustard and honey. Spread mixture over the almost cooked fish. Rotate fish in pan. Place back into the oven and bake until fish flakes easily with fork.
To make a complete heart healthy meal out of this Flounder Dijon, here is a tip you may like:
1 serving Flounder Dijon
½ cup red potatoes, steamed (tossed with chopped chives and Dijon mustard)
½ cup any variety of fresh vegetables such as broccoli, peas, cauliflower, brussel sprouts, onion, steamed
1 cup mango, sliced (for dessert)
