Tip of the Week

The recipe mentioned here is just one of the delicious seafood recipes that you can prepare in your own kitchen. It is quick, healthy, and nutritious.


Grilled Salmon with Mint Sauce (serves 4)
1/2 c plain yogurt
1 T cilantro, freshly chopped
2 t mint, freshly chopped
salt and pepper to taste
4 7-ounce salmon steaks, 1" thick
2 t vegetable oil

Combine the yogurt and spices in a small bowl. This is the mint sauce.
Lightly spray grill (indoor or outdoor) with oil.
Preheat the grill.
Brush the fish with the oil and season with pepper to taste.
Place salmon onto grill.
Cook until golden, about 5-6 minutes. Flip salmon steak over and cook until done – about 4 minutes. It will be opaque in color, but still juicy.
Remove steaks from grill and place onto serving plate.
Drizzle mint sauce over steak prior to serving.
Make this grilled seafood recipe into a complete meal by serving it with a baked potato. Top the baked potato with a mixture of plain yogurt and freshly chopped basil. Sprinkle some garlic powder on this, if desired. Have your side dish be a roasted, or grilled, veggie mixture. Suggestion: broccoli, carrots, red pepper, and onions. Enjoy a salad of fresh greens with a vinaigrette. Dessert: a fresh fruit medley.

Your beverage of choice, if you prefer wine, might be a refreshing Pinot Grigio.
